Ingredients:  
1 can black beans, drained and rinsed
1 sm can shoepeg white corn, drained
1 can Rotel, mild or hot
1 onion, purple or white, diced
1 med Jalapeño pepper, diced
2 med tomatoes, diced
1 clove of garlic, diced (if desired)
Juice of fresh lime
Salt and pepper to taste (I don’t add any salt)
Fresh cilantro, chopped
Large bag of chips (Frito scoops are the best)

Directions:

-Mix canned ingredients. Add onion, jalapeno, tomatoes and garlic. Add fresh lime juice and mix. Add fresh cilantro and salt and pepper to taste. Mix and serve or can be chilled. Store left overs in a glass container. Will keep up to a week, but is better if used within a couple of days.

NOTE: I add about ¼ cup of diced celery and ¼ to ½ cup of diced bell pepper.
