1 1/4 cups unsalted butter, softened to room temp
1 cup packed brown sugar
1/2 cup sugar
1 large egg
2 tsp vanilla
1 Tbsp dark molasses (I used corn syrup)
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
3/4 tsp ground cinnamon (I used 1 tsp cinnamon, no cloves)
1/4 tsp ground cloves
2 cups uncooked quick-cooking oats (not whole rolled oats)

Preheat oven to 375º. Line a cookie sheet with parchment paper or silicone baking mat. Set aside. Cream butter and sugars together at medium speed of stand mixer until light and creamy. Add egg, vanilla and molasses, scraping down the sides as needed. Set aside. In a medium-sized bowl, combine the flour, baking soda, salt, cinnamon and cloves. Stir together. Add quick oats and combine. With mixer on low, slowly add the dry ingredients. The dough will be quite thick. Drop dough with large cookie scoop, 2 Tbsp. Space 2" apart on cookie sheet. Bake for 10 minutes, until cookies are lightly golden around the edges. Allow cookies to cool on cookie sheets for 3 minutes before transferring to wire rack to cool completely.
