3 lbs medium size red potatoes, unpeeled and sliced 1/4 " thick
1/4 cup olive oil
6 garlic cloves, pressed
1/2 tsp salt
1/2 tsp pepper
2 Tbsp chopped fresh parley

Directions:
Directions:
preheat oven 350º In a large bowl, combine potatoes, oil, garlic, salt and pepper, toss until well coated.Layer half potatoes in 9x13 baking dish, sprinkle with 1Tbsp parsley top with remaining potatoes. Cover and bake 45 minutes or until potatoes are tender. Sprinkle with remaining parsley
