3 tbs fresh squeeze lemon juice
1 tbsp red wine vinegar
1/4 tsp dried oregano
1 clove garlic paste
kosher salt & fresh ground pepper
1/4 c olive oil

1 cup quinoa
2 cups water or chicken broth
kosher salt and pepper
2 cups yellow and red grape tomatoes
1 cup pitted kalamata olives
2 green onions, thinly sliced, chopped

1/2 cucumber, diced
feta for sprinking.

Directions:

whisk together lemon juice, vinegar, oregano, garlic and some salt and pepper in a small bowl. Slowly whisk in oil until emulsified. Let sit at room temperature while you prepare the salad to allow flavors to meld.

Rinse quinoa in strainer until water runs clear. Combine quinoa, 2 cups water or broth, 1 tsp salt and 1/4 tsp pepper in small saucepan and bring to boil. Cook until water is absorbed and quinoa is tender, about 15 minutes.

Transfer to bowl and fluff with fork and let sit 5 minutes to cool slightly. Add tomatoes, olives, green onion, cucumber. Add dressing. You can let it sit. Add feta right before serving.
