Pie:
1 can (14 oz) sweetened condensed milk
4 egg yolks
2/3 cup fresh or bottled key lime juice (fresh is better)
1 1/2 tsp lime zest
Crust:
1 1/2 cup crushed graham crackers
1/3 cup sugar
6 tbsp butter
Topping:
3/4 cup whipping cream
1 tsp vanilla
2 tbsp powdered sugar

Directions:
Preheat oven to 350. Crust: Mix graham cracker crumbs, sugar, and butter. Press firmly into a 9-inch pie pan. Bake for 10 minutes. Remove from oven and allow to cool to room temperature before filling. Lower the oven temperature to 325.
Pie: Whisk egg yolks and lime zest until fluffy, about 5 minutes. Slowly add milk, and whisk until thick, 3-4 minutes. Add juice, and whisk till blended. Put in crust, and bake 10 to 15 minutes at 325 till set. Chill in refrigerator for at least 2 hours before topping.
Topping: Whip cream with whisk until fluffy. Add vanilla and powdered sugar. Spread over top of the pie.
