4 qt. sliced medium cucumbers
6 medium white onions, sliced
2 green bell peppers, chopped
3 cloves of garlic, sliced
1/3 c. coarse pickling salt
5 c. sugar
3 c. cider vinegar
1 1/2 tsp. turmeric
1 1/2 tsp. celery seed
2 tbsp. mustard seed

Directions:

Mix together cucumbers, onion, bell peppers, and garlic. Add salt and mix together well. Cover with ice cubes, mix. Let stand for 3 hours.

Drain well, then combine remaining ingredients, and pour over the cucumber mixture. Heat to a rolling boil, and then remove from heat. (If you let them boil too long, they won't be crispy.)

Seal in hot, sterilized jars. Process in a boiling water bath for 10 minutes. Remove from water and let dry. They should make a popping sound as they seal up. Tighten the lids a bit after they are dry, and you are done.
