1/2 cup soft tofu
1/4 cup of fresh lemon juice
3 tablespoons of grated Parmesan
2 garlic cloves minced
1 1/2 teaspoons Worcestershire sauce
1/2 teaspoon Dijon mustard
1/4 teaspoon salt
ground pepper to taste
1/3 cup olive oil

Directions:
Directions:
In a blender or food processor puree everything until well combined.

This dressing will keep in the fridge for a week.

Cut and wash romaine lettuce, mix dressing, add croutons, and grated Parmesan cheese.
