For cake:

1 ½ c flour
1 c sugar
1 ½ t baking powder
½ t salt (don’t double)
¾ c milk
1 t vanilla
1/3 c Crisco Shortening
1 egg

Filling (if using (2) 9" cake pans:

red raspberry jam (or frosting)

Frosting:

2/3 c Crisco shortening
1/3 c soft margarine
1 ½ c confectionary sugar
¼ c light cream
1/8 t salt
1 t vanilla

Directions:
Directions:
Throw all cake ingredients together in bowl and mix on low speed for 30 seconds. High speed for 3 minutes.
* Double recipe for 2- 9" round pans.

Pour into 9" round pans and bake at 350 ° for 25 – 30 minutes. Let cool and remove from pans.

For frosting:

Cream shortening and margarine, add sugar a little at a time. Slowly add cream, salt and vanilla. Beat on high speed for 5 minutes.

Spread filling of choice on top of one cake and layer with second cake. Spread frosting on top.

Also delicious with chocolate filling and frosting.
