1 onion, diced
½ stick margarine (or ¼ c olive oil)
1/3 pkg. fresh mushrooms (optional)
1 ¼ c uncooked rice
2 ½ c water
5 beef or chicken bouillon cubes

Directions:
Directions:
Saute slowly onions in margarine (or olive oil). Add 1/3 pkg. fresh mushrooms (can omit). Add 1 ¼ c uncooked rice.

In a separate pan, boil 2 ½ c water and add 5 beef or chicken bouillon cubes till dissolved. Add to rice and onion mixture. Cover and set to low. Cook for 20 minutes to ½ hour (until liquid is dissolved).
