2 tsp. cinnamon
1 tsp. ground ginger
1 tsp. nutmeg
½ tsp. salt
¼ tsp. baking powder
¼ tsp. allspice
¼ tsp. ground black pepper
¾ c. unsalted butter, softened
1 ½ c. dark brown sugar
2 tbsp. molasses
1 large egg yolk
1 large egg
1 tsp. vanilla
1 egg white
2 c. chopped pecans

Sift together flour, cinnamon, ginger, nutmeg, salt, baking soda, allspice and pepper.

In a separate bowl, cream the butter on medium-low until smooth, about 2 minutes. Add the brown sugar in 3 additions, then the molasses, and mix another 2 minutes. Blend in the egg yolk, egg and vanilla, scraping the bowl as needed.

Reduce to low speed and add the dry ingredients, in 3 additions, to the butter mixture, mixing till just combined.

Divide the dough into thirds, wrap in plastic wrap and refrigerate for 30 minutes. In the mean time, whisk the egg white with 1 tsp. water and place the chopped nuts in a long, shallow dish.

Roll each third of dough into an 8-inch log. Brush with egg white and then roll in nuts, pressing gently so nuts adhere. Wrap the log tightly in plastic wrap. Push the ends of the log toward the centre so that its final dimensions are about 9-inches long and 1 ¾-inches thick. Refrigerate logs until firm enough to slice, about 2 hours.

Preheat oven to 350º. Cut dough into ¼-inch thick cookies, and place on parchment-lined baking sheets. Bake in upper and lower thirds of the oven for about 14 minutes, until tops feel set and slightly firm.
