For Carrot Cake:
2 c sugar
1/2 c oil
4 eggs
3 c grated carrots
2 t vanilla
2 c flour
2 t baking soda
2 t cinnamon
1 t salt

For Frosting:
8 oz cream cheese, softened
1 stick butter
1 box confectioners' sugar
2 t vanilla

For Cake:

Sift dry ingredients. Add other ingredients. Beat until mixed. Bake at 350º in 2 greased and floured layer pans for 20 minutes or until toothpick inserted comes out clean. Let cool on rack for about 10 minutes, then remove from pans.

For Frosting:

Beat cream cheese and butter together. Add confectioner's sugar and vanilla. Beat until creamy and smooth.
