1 cup of softened butter
1 1/2 cups of lightly packed brown sugar
1 tsp vanilla
2 eggs
1 tsp. salt
1 tsp.baking soda
1 1/2 cups of flour
1 1/4 cups of quick rolled oats
1 cup of long flaked coconut
1 1/2 cups of chocolate chips

Directions:

-Beat softened butter with brown sugar until well mixed
-Add vanilla
-Stir in 2 eggs one at a time
-Add and mix in one at a time: salt, baking soda, flour, quick rolled
oats,coconut,chocolate chips

Slightly grease cookie pan. Once I have placed the cookie dough on the cookie sheet I flatten the cookies with a fork.

Bake cookies at 350ºf (180º c) for 12- 15 minutes

This receipt came from Linda's close friend Margie, who passed away last year(2014). She was an absolutely wonderful baker. Over the years Margie would provide me a regular supply of these wonderful cookies. She gave me the receipt, so I started making them. They have become regular part of our lunches at the Ski Hill and whenever I get the craving.
