2 lbs. beef, cubed (do not brown)
2 - 3 celery stalks, cut up
4 - 6 carrots, cut lengthwise
2 onions, sliced
1 can (10 1/2 oz.) tomato soup
1/2 soup can water, cider or red wine
3 potatoes, peeled & cubed
1 t. salt
1 t. paprika
1/2 t. pepper
1/2 t. thyme
3 T. quick cook tapioca

Combine all ingredients and place all in large (3 qt.) casserole dish and stir thoroughly. Cover tightly. Bake at 250* for 4- 5 hours.
