1 lg. broiler chicken, cut in pieces
1/4 c. salad oil
1 medium chopped onion
1/2 clove garlic
1/4 c. dry white wine
1/2 c. chopped fresh tomato
1/2 c. sliced mushrooms

Sprinkle the chicken with salt and pepper an flour. Brown in 1/4 c. salad oil.
Take the chicken out of the pan and set aside.
Cook in the pan juices, the chopped onion and garlic.
Add the pieces of chicken and dry white wine, tomato and mushrooms.
Cover closely and cook over VERY low heat until tender for 40-60 minutes
