16 ounces sirloin filet
1 tablespoon canola oil
1½ tablespoons lime juice, plus more for assembly
6-8 small flour Tortillas
½ cup roughly chopped cilantro
½ cup chopped onion

Directions:
Directions:
Place sirloin filets in the freezer, chill until very firm and easy to cut, about 8 minutes.

Remove from freezer and chop into a small dice. Season liberally with salt and pepper.

Heat a cast-iron or non-stick skillet to a medium-high heat. Once pan is pre-heated, add oil. Add chopped beef and cook until crispy on all sides, about 4-5 minutes.

Pour lime juice over, cook until absorbed, about 30 seconds. If necessary, season with salt and pepper.

Warm tortillas.

Place steak in tortilla and sprinkle with plenty of chopped cilantro, onion and squeeze of lime juice.
