4 c. water
1 c. stone ground grits
Salt & Pepper
3 tbsp. butter
1 c. sharp cheddar cheese, shredded
1 lb. shrimp, peeled, deveined, and without tails
6 slices of bacon
4 tsp. fresh lemon juice
2 tbsp. parsley
1/2 c. thinly sliced scallions
1 large garlic clove

Directions:
Directions:
Bring water to a boil. Add grits to the boiling water, while whisking to prevent clumps. Add a bit of salt and pepper. Lower heat, bring to simmer, and cover until water is absorbed. Once thick, remove from heat. Stir in butter and shredded cheese.

Rinse and pat the shrimp dry. Fry the bacon in a large skillet. Remove when done. Add shrimp to the bacon grease, and cook until shrimp turn pink. Add lemon juice, scallions, garlic and parsley, then crumbled bacon. Cook for another 3 minutes. Spoon grits into bowls, and top with shrimp mixture.
