Knock You Naked Cookie Bars Recipe

2 ¼ c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 c. (2 sticks) butter, softened
¾ c. granulated sugar
¾ c. packed brown sugar
1 tsp. vanilla extract
2 large eggs
2 c. chocolate chips

Caramel-Peanut Butter
..... (inspired by The Pioneer Woman)
½ c. evaporated milk
60 whole caramels, unwrapped
½ c. peanut butter, melted
....(Using microwave works well.)
1/3 c. semi-sweet chocolate chips

Directions:
1. Preheat oven to 375 degrees & grease 9 x 13 in. pan.
2. Combine flour, baking soda & salt in small bowl. Beat butter, granulated sugar, brown sugar & vanilla extract in large mixing bowl until creamy. Add eggs, one at a time, beating well after each. Gradually add flour mixture. Stir in 2 c. chocolate chips.
3. Spread one-half of dough into prepared pan & bake 8 to 10 minutes. Remove pan from oven and set aside.
4. In double boiler (or in heatproof bowl set over saucepan of boiling water) melt caramels with evaporated milk.
5. When caramels have melted and combined with milk, add melted peanut butter and pour over baked cookie dough. Sprinkle 1/3 c. chocolate chips evenly over caramel.
6. Turn out remaining dough on to clean work surface. With your hands, form dough in such a way as to make the top layer of the bars. (A little smaller than the bottom layer.) Transfer to pan on top of caramel/chocolate chips layers. NOTE: Working between two layers of waxed paper is helpful. Also, using a spatula to make the transfer might be helpful.
7. Bake for 15 to 20 minutes or until golden brown and edges are set. Cool in pan on wire rack. Makes 2 dozen bars.
