1 whole chicken
3 lbs. ground beef
1 cup bread crumbs
1 tsp. garlic salt
1 tsp. garlic powder
1 tsp. onion powder
1/4 cup of Parmesan cheese
5 tablespoons salt
6 chicken bullion cubes
1 stick of pepperoni or already sliced bag about 1/2
6 to 8 heads of escarole

Directions:

Mix
Ground beef
bread crumbs
garlic salt, garlic powder and onion powder and Parmesan cheese.
Roll into meatballs around the size of a nickel.


In large stock pot add water 3/4 of the pot full.
Add
chicken
pepperoni
meatballs size of a nickel
6 bullion cubes and 5 tablespoons of salt
Cook for about 2 hours.

While soup is cooking boil down the heads of escarole. Squeeze excess water off and roll in balls. Store overnight. Chill soup overnight scrape off excess fat before adding escarole to pot. Cut the escarole into bite size pieces before adding to soup.
