1/2c chopped Celery
2 c thick white sauce
1/2 c cubed cheddar cheese
1/2 c sliced mushrooms, well drained
1 tbsp onion flakes or 3 green onions chopped
2 tsp parsley
1/2 tsp dry mustard
dash black pepper
3 hard boiled eggs, sliced
12-16oz frozen fish fillets, cut up in 1/2 inch pieces, thawed and pressed dry with paper towel
1/2 c cracker crumbs
2 tbsp melted butter
2 tbsp grated parmesan cheese

Directions:
Directions:
Cook celery until tender in butter to be used for white sauce. Remove and prepare white sauce, add cheddar cheese, stir till melted. Fold in celery, mushrooms, onion flakes, parsley, mustard, pepper, eggs, and fish. Pour into 1 qt casserole dish or individual shell bakers. Combine butter, crumbs, and parmesan cheese. Spread evenly over fish mixture. Bake at 350º for 30 minutes. Makes 4 servings
