Zucchini sliced 1/2 inch long wise
Yellow Squash sliced 1/2 inch long wise
Bell peppers
Green onions with root removed
Mushrooms
Whole garlic peeled
Marinated artichoke hearts ( skip sauce below)
Prepare a selection of veggies above or your own choices

1/4 C plus 2T oil
3T balsamic vinegar
2 cloves garlic chopped fine
1 tsp fresh Italian parsley chopped fine
1 tsp fresh basil chopped fine
1/2 tsp fresh rosemary chopped fine
Salt & pepper
If substituting dried herbs reduce amounting half

Using the 1/4 oil lightly brush all veggies and sprinkle with salt and pepper. Grill for 5-7 minutes depending on the veggie. Mix the rest of the ingredients in a small bowl. Plate veggies and drizzle with sauce.
