1-1/2 cups Yellow Cornmeal
1-1/4 cups Flour
2 TBSP Sugar
1 TBSP B. Powder
1 tsp Salt
1 tsp Ground Cumin
2 Eggs
1 cup Skim Milk (you can sub with soy or almond milk)
3 TBSP Melter Butter
1 can Corn
1/2 cup Chopped Red Pepper
1/2 cup Chopped Seeded Jalapeno Peppers (or pickled Jalapenos)

Directions:
Directions:
Preheat oven to 425º.

In a large bowl, combine the first 6 ingredients. In another bowl, combine the eggs, milk and butter. Stir into dry ingredients just until moistened. Stir in the corn, red pepper and jalapenos.

Coat muffin tins with cooking spray and fill two thirds full.

Bake for 12-16min. or until a toothpick comes out clean. Cool for 5 min. before moving from pans to a wire rack.
