Ingredients: 1 1/2 c. of flour 1/2 tsp. salt 3 tsp. baking powder 1 1/2 to 2 eggs 1 1/2 c. of milk 3 Tbsp. vegetable oil 1/2 tsp. vanilla

Directions:Mix the dry ingredients in an appropriately sized bowl. Mix the liquid ingredients in an appropriately sized measuring cup. Mix the liquid ingredients with the dry ingredients in the bowl - add milk if required to provide a consistancy similar to creamy salad dressing - some flour lumps are OK. While you are measuring and mixing the ingredients, preheat the grill to 400 degrees (Mom said water should bounce off the grill). Thinly cover the grill with vegetable oil. The recipe will result in 12 to 14 - 4 inch diameter pancakes (3 to 4 servings) The recipe doubles, triples or more depending on the crowd and the size of the appetites. Once you have the batter on the grill wait until bubbles form and break then flip the pancakes. When the pancakes start to steam remove them from the grill. The pancakes can be held in a 175 degree warming oven. Add strawberries, blueberries and/or bananas to the recipe if you wish. |

Notes: The initial recipe was from Mom and she would make sure that I never flipped the pancakes more then once and never, never pressed down on them. Over time we decreased the sugar from 3 to 2 tablespoons .
