3 cups ricotta ( 1 1/2 pounds )
1/4 cup flour
1/8 tsp salt
2 TBL each of orange and lemon peel.
1 TBL vanilla
4 eggs
1cup sugar
1 pie crust

Directions:
Directions:
Prepare crust....

Combine ricotta, flour , salt, orange and lemon peel , vanilla.
Beat eggs till foamy. Add sugar. Beat until thick and in soft peaks
Add to ricotta mixture.
Pour into crust and bake at 350 for 50to 60 minutes until firm. Let cool and sprinkle with confectionary sugar.
