Crust:
3 eggs
2 c. sugar
1 1/4 c. shortening
2 tsp. honey
2 tsp. baking powder
4 c. flour

Ricotta Filling:
1 lb. Ricotta Cheese
1 tbsp. flour
1/2 tbsp. sugar
2 eggs
1 tsp. vanilla

Directions:
Directions:
For the crust:
Cream together eggs, sugar, and shortening. Add
other ingredients to form a soft dough. With floured
hands flatten a small ball of dough. Fill dough into ungreased muffin tins to top of rim.
Fillings:
Combine all ingredients in mixing bowl and beat with electric mixer until smooth.
Fill crust three quarters full with ricotta filling.
Bake at 350 degrees for 20 to 25 minutes.
Sprinkle with confectioner sugar.
You could also top the muffin with dough if you like!
