5 cups sliced apples
1 tbsp flour
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tbsp grated lemon rind
1 tbsp lemon juice
butter

1 lb Crisco shortening
6 cups cake & pastry flour OR 5 1/2 cups all purpose flour
2 tsp salt
1 egg
1 tbsp vinegar
water

Directions:

Combine sugar, flour, cinnamon, nutmeg and lemon rind in a bowl and add apple slices and toss to coat. Put aside

Put flour and salt in a large bowl and cut in shortening with pastry cutter or two knives until very fine.

Add 1 egg and the 1 tbsp in a measuring cup and then add enough water to make 1 cup of liquid. Stir to blend.

Stir in liquid into the shortening/flour mixture until combined.

Take pastry about the size of your fist and roll out to fit a pie plate. Fill with apple pie mixture, sprinkle with lemon juice and add a dot of butter. Then roll out another shell for the top. Crimp together and put 3 slits on top.

Bake at 425 degrees for 40-45 min or until golden brown
