15 Graham CRACKERS
2 T Melted Butter
FILLING:
4 (8oz) packages cream cheese
1 1/2 cups sugar
1/4 cup flour
4 eggs
3/4 cup milk
1 cup sour cream
1 T vanilla extract

Directions:
Directions:
Preheat oven to 350º. Grease 10 inch springform pan. In a medium bowl, mix crushed crackers with melted butter. Press onto bottom of springform pan.
In a large bowl, mix cream cheese until smooth. Sift flour and sugar together then add to the cream cheese, scraping the sides of the bowl to be sure it is all incorporated. Mix in the eggs, one at a time, mixing just enough to integrate. Stir together milk, sour cream, and vanilla then fold into cream cheese mixture until smooth. Pour filling into prepared crust.
Bake in preheated oven for 1 hour. Turn the oven off and let cake cool in oven with the door closed for 5 to 6 hours. This prevents the cake from cracking. Chill in refrigerator until served.

Bring cream cheese and eggs to room temperature before beating. After one hour of baking, the center will not be set but will continue to cook while cooling in the oven. Do not overbeat the mixture once the eggs are added. Surround the pan in foil and bake in a water bath and the cheesecake is creamier!
