Ingredients:  
1 stick butter
grated rind of one lemon
juice of three lemons
1 1/2 cups sugar
3 whole eggs
3 egg yolks
tiny pinch of salt
Directions:
Directions:
Melt butter slowly over hot water in a double boiler with lemon juice and rind
Beat eggs - add sugar and salt
Stir batter into lemon juice mixture
Stir rapidly over hot water until thick and creamy
Cool
Keeps several weeks if covered and in refigerator
