3 tbsp oil
1 small onion
1/2 - 1 c zucchini
2 stalks celery
4 cloves garlic
4 cups vegetable broth (do not use chicken broth!)
1 can kidney beans
2 cans 6 Bean blend
1 (14 oz) diced tomatoes
3/4 c shredded or julienned carrot
2 tbsp minced parsley
1 1/2 tsp oregano
1 -1 1/2 tsp salt
1/2 tsp ground black pepper
1/2 tsp dried basil
1/4 tsp thyme
3 c hot water
4 c baby spinach
2 c small shell pasta (or whatever type of small pasta your heart desires)

Directions:
Directions:
1. Heat the oil over medium heat in a large stock pot.
2.Saute onion, garlic, and zucchini in the oil for 5 minutes or until onions begin to turn translucent.
3. Add vegetable broth to pot, plus tomatoes, beans, carrot, hot water and spices.
4.Bring soup to a boil, then reduce heat and allow to simmer for 20 minutes.
5.Add spinach leaves and pasta and cook for an additional 20 minutes or until desired consistency.
6.Top with shredded cheese when serving. Or don't. It's your call.

This copycat version of the Olive Garden's© Minestrone soup is thicker than what you would have in the restaurant. You can adjust the amount of vegetables accordingly. This is a family favorite.
