3 lbs. beef eye of round or bottom round roast, all fat trimmed
5 cloves garlic
1 medium onion
1/2 lime, juiced
2 - 4 chipotles in adobo sauce (to taste)
1 T. ground cumin
1 T. ground oregano
1/2 t. ground cloves
salt and pepper
3 bay leaves
1 t. oil
1 c. water

Directions:
Directions:
Place garlic, onion, lime juice, cumin, oregano, chipotles and cloves in a blender.

Trim fat off meat, cut into 4 inch chunks. Season with salt and pepper and brown on high heat in 1 t. oil. Add liquefied spices, water, bay leaves and simmer covered on low for 4 to 5 hours. Add water from time to time to make sure it doesn't dry out. (If you have a pressure cooker, cooking time would be reduced to about 2 hours.)

Once cooked and the meat is tender, remove the meat to a dish and shred it with two forks. Remove bay leaves from juice, add shredded meat back into juices. Adjust seasoning (salt and/or cumin) as needed. Simmer uncovered about 10 minutes to let the flavors penetrate.
