1 1/4 cups sugar plus extra for rolling dough in
1 cup unsalted butter, softened
3 large egg yolks, slightly beaten
1 tsp. vanilla extract
2 1/2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. cream of tartar

Directions:
Directions:
Preheat oven to 350°. Lightly grease cookie sheets or use parchment paper.
In a large bowl, cream the sugar and butter together until fluffy, about 3 minutes. Beat in the
egg yolks and vanilla. Mix well. Sift the flour, baking soda and cream of tartar together. Add the
flour mixture to the sugar mixture in 4 equal parts, mixing well after each addition. Form dough
into rounded teaspoon size balls. Roll dough in extra sugar. Place dough onto cookie sheet
spacing dough approximately 2 inches apart. Do not flatten. Bake for 11 minutes or until slightly
golden brown. Cool on a wire rack. Store in a covered container.
