2/3 c. sugar
1/4 c. cornstarch
1/2 tsp. salt
3 c. milk
4 egg yolks beaten
2 tbsp. margarine
2 tsp. vanilla
3/4 c. shredded sweetened coconut (or ~1 1/2 tsp. coconut extract)

Directions:
Directions:
Mix sugar, cornstarch, and salt in 2 Qt. saucepan.
Gradually stir in milk. Cook over medium heat stirring constantly until it thickens and boils. Boil for 1 min.
Stir at least half of the hot mixture gradually into egg yolks.
Stir back into hot mixture in saucepan.
Boil and stir 1 minute; remove from heat.
Stir in margarine, vanilla and coconut (or extract)
Pour into baked pie shell. Press plastic wrap directly on filling. Refrigerate ~2 hrs. until set.
Eat with lots of whipped cream! :)
