6 to 8 large potatoes, peeled and cut into 1 1/2 or 2" chunks
Juice of 1 lemon
1/4 cup olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon oregano (or thyme or rosemary)

Directions:
Directions:
Parboil the potatoes in salted water for 3 to 4 minutes. Drain potatoes, and let stand for 5 minutes. Then toss the potatoes in a casserole dish with the lemon juice. Add the salt, pepper, herbs, and olive oil.

Bale at 375º for about 1 hour (until golden brown), stirring every 20 minutes or so.
