2 c. flour
2 t. Old Bay seafood seasoning
1 t. baking soda
pinch of kosher salt
1 bottle cold beer
Peanut oil for frying
2 lbs. of fish (Haddock, Cod, etc) cut into strips for fish and chips or whole for sandwiches.

Directions:

Combine and mix 1st four ingredients. Make a well in the center of the flour mixture and gently stir in the cold beer. Mix until just combined.

Preheat oil to 375º.

Dip the fish in the batter mixture and coat generously. When adding fish to the oil, dip about 1/3 to 1/2 of the fillet into the oil and allow the batter to start puffing and then gently slide the rest of the fist into the oil. Fry till golden brown, about 5 minutes, turning the fish over at 2 1/2 minutes.

Drain on paper towels. You can keep the fish warm in a 300º oven while frying in batches.
