Diced, cooked Chicken
4 oz. can of chopped Green Chilies
1 t. minced Garlic
1/2 c. minced onion
1/4 c. minced Anaheim Pepper or 1 Jalapeno
1 T. oil
4 c. chicken broth
2 T. cornstarch
8 oz. shredded cheddar cheese
2 T. lime juice
10 oz. can chopped tomatoes (Rotollo's)
1/2 t. ground cumin
1/2 t. cayenne
1/4 t. Mexican oregano
Salt and Pepper
2 flour tortillas, cut into strips and fried, or bagged strips
6 medium corn tortillas, cut in strips or bagged tortilla strips

Directions:
Directions:
Saute onions, chilies, peppers and garlic in oil until soft. Dissolve the cornstarch in the chicken broth, then add to onion mixture, along with remaining ingredients (except cooked chicken and tortilla strips) and simmer for 20 minutes, until cheese melts.

Add chicken to heat thru.

Pour soup in bowls, top with more cheese and tortilla strips.

You can use rotisserie chicken or you can cook fresh chicken breasts in oil for 4-5 minutes per side, cool slightly and dice, drop in the pan when you add the broth. The chicken will finish cooking in the broth.
