How to make 20 lbs of Menudo!
First, you must clean and wash beef tripe, then add tripe to a roaster with, a lemon and onion and add 2 tbs of garlic salt to cook for approximately 4 hrs. If you don't mind the smell let it slow cook all night.
Next, if you let it cook all night the tripe should be tender and ready to add the posole or (hominy) in English. You will also be ready to add the red chile and oregano(palm full)

Chile prep: Chile pods must be cleaned and stems removed, then boil and go ahead and add garlic to the chili pods, blend chili and add to menudo for taste.
