1 C salted butter, softened
1/2 C sugar
2 C flour

.Preheat oven to 350 º

Whip butter with electric mixer, add sugar and then flour. Place dough on a large sheet of parchment paper. Mix the dough with hands to meld together, wrap in parchment paper to make a log. Refrigerate to chill (or freeze if planning to use later).

Unroll dough in parchment paper and slice into 1/4" slices. You can roll these into balls and flatten with fork or shape into squares.

Bake 15-20 minutes until a light tan color and hardened.

My mother in law Phyllis passed this recipe down from her mother Edith Roth, or Nanny as David called her.
It is the easiest and best tasting shortbread I have tried. I like to make a double batch and freeze a portion for later. I have also dipped the finished cookies in melted dark chocolate to make them even more decadent.
