1/4 C extra virgin olive oil
2T fresh lemon juice
1 tsp honey
1/2 tsp chopped thyme
Salt and freshly ground pepper
5 oz baby arugula
1 pear thinly sliced
1/2C salted roasted pumpkin seeds
3oz crumbled goat cheese (opt)

Directions:
Directions:
In a small bowl whisk the olive oil with the lemon juice, honey and thyme. Season with salt and pepper.

In a large bowl, toss the arugula with the pear and pumpkin seeds. Add the dressing and gently toss well. Top with crumbled goat cheese and serve right away.

I found this recipe on Food & Wine web page News Years day. What an easy and fresh way to start the new year.

Green apples and Asian Pears can be sobstituted. I didn't have the pumpkin seeds and it was still great.
