1 1/4 cup plain flour
1/2 cup corn starch
1/3 cup confectioners sugar
3/4 cup butter (1 1/2 sticks) softened
1 t. grated lemon peel
1 T. lemon juice

FROSTING:
3/4 cup confectioners sugar
1/4 cup butter (1/2 stick) softened
1 t. grated lemon peel
1 t. lemon juice

COOKIES
1. Combine all cookie ingredients. Beat at low speed until well mixed.
2. Divide dough in half; roll each half into "slice and bake" shaped roll and refrigerate until firm.
3. Cut into 1/4-inch slices.
4. Cover each cookie sheet with parchment paper.
5. Bake for 7-8 minutes (DO NOT BROWN!!!). Cool completely; then frost. These cookies are VERY delicate and will break easily, so handle with care.

FROSTING:
Combine all ingredients and beat until fluffy. Frost cool cookies carefully.

You can substitute lime peel and juice for the lemon to make lime meltaways! I usually add a very small dot of green food coloring to frosting when I make the lime ones.
