1 bag of the pumpkin mix [Krusteaz brand pumpkin spice cake mix (secret #1)] Note: do not use this mix if you have kids with an allergy to nuts.
1 stick butter, room temperature
1/2 c. sugar
1 egg
1 c. quick oatmeal
1 tsp. cinnamon
1/4 tsp. nutmeg
3 tbsp. of water
1-2 c. of oatmeal or craisin (optional)

Preheat oven to 375º. Place the metal rack in the middle of the oven. Using a stand-up mixer, pour contents of one bag of mix and the stick of butter and mix for 1 minute. Use stir or mix setting ONLY. With the mixer running add oatmeal, egg, sugar, cinnamon, nutmeg, raisin or craisin (optional) water. Continue mixing until dough forms. Line cookie sheet with parchment paper or wax paper. This makes cleaning the cookie sheet a breeze after. Use ice cream scooper (medium cup) to scoop the cookie dough equally. Place each dough scoop on the cookie sheet about 2 inches apart. Bake exactly 13 minutes (secret #2). That is why a good timer is essential in making sure that the cookies do not get overcooked.
