4 to 6 pound prime rib of beef, bone-in or boneless
Sea Salt
Coarse ground pepper

Directions:
Preheat oven to 550º. Place roast in metal roasting pan and coat with coarse pepper and salt to taste. Place in oven for 5 minutes per pound and then turn off oven and allow to cook for two hours. Do not open oven. After about 1 hour 45 minutes check with meat thermometer for desired doneness. When done, remove from oven and allow it to sit for ten minutes before slicing. Serve with horseradish sauce, if desired.

Do not use glass baking dish as it may break at that high of temperature. The roast comes out perfect!
