Ingredients: Rice 12 cups long grain rice 6 tablespoon chicken base 6 tablespoon butter salt to taste 24 cups water 6 cups grated Romano cheese 9 jumbo eggs
Meat Filling 1# ground beef 85/15 2 tablespoon tomato sauce 1/2 can small tomato paste 1 small can baby peas salt pepper garlic olive oil
Spinach Filling 3 pkg. fresh baby spinach garlic Romano cheese mozzarella cheese fontina cheese ricotta cheese olive oil

Directions:1. Cook rice - add chicken base,butter and salt to water. cook rice- let cool 2. to cooled rice add 6 cups of grated cheese and 9 jumbo eggs (scrambled) mix well
Meat: 1. In a saute pan add olive oil and minced garlic- cook until soft without browning. 2. add meat sauté until brown. 3. add sauce and paste cook slightly 4. salt paper to taste 5. Let cool and add peas
spinach filling 1. boil and drain fresh spinach. 2. in a saute pan saute garlic till soft add spinach 3. add all cheese mix completely and let melt. salt pepper to taste.
Assembly: 1. take rice in your hand add 1 teaspoon of filling in middle - cover with rice 2. pack well 3. roll rice balls in breadcrumbs- egg wash - and then a second time in breadcrumbs 4. when all rice balls are assembled you will deep fry in corn oil till browned resembling the color of oranges. 5. rest on paper toweling . |
