Pistachio Bark Recipe

1 1/2 C dried cherries, chopped
2 TBS water
2 (12 oz) pkg white chocolate morsels
6 (2 oz) squares vanilla bark
1 1/4 C chopped pistachios

Directions:
Directions:
Microwave cherries and water for 2 minutes, then drain.
In a large, heavy pot melt the morsels and bark over low heat. Stir in cherries and pistachios. Spread into a wax paper lined 15x10 inch jelly roll pan.
Chill one hour or until firm.Break into pieces and store in an airtight container.
Makes 3 1/2 lbs
