1/2 cup butter
1 cup sugar (can be reduced to 2/3 cup and are great!)
1 egg
1/2 cup all purpose flour
1 heaping tbsp cinnamon (or more to taste)
1/4 tsp salt
1 cup chopped pecans or walnuts

Preheat oven to 35o degrees.

Grease a 9-in round baking pan, then cut a circle of parchment paper to fit the bottom of your pan. Place the parchment into the greased pan and lightly grease it.

In a mixing bowl, cream butter and sugar. Add egg; beat until light and fluffy. Combine flour, cinnamon and salt; add to creamed mixture and beat until smooth. Stir in pecans. Spread into prepared baking pan. Bake at 350 degrees F for 35-40 minutes or until a wooden pick comes out clean. Cool on a wire rack. After about 10 minutes of cooling, slide knife around rim of pan to prevent sticking. Invert pan and tap to remove large cookie from pan, peel off parchment paper, and continue cooling on wire rack. Cut into small wedges when cooled.

I make these at the holidays every year, and am always asked for the recipe. They are super easy, using ingredients I always have on hand, and so delicious!

recipe calls for greased 8-in square pan. I like making it in the round pan and cutting it into small wedges. Also the instructions indicate cutting into small bars while warm and rolling in confectioners sugar. IMHO confectioners sugar is unnecessary except if you want to sprinkle a little on the top to make it pretty. If I didn't paper line the pan, the bars are difficult to remove at least the first few and they likely won't come out pretty.

I have recently been on a kick to reduce sugar in some of my baked goods. I reduced the sugar to 2/3 cup and they are great!
