1/2 cup (1 stick) butter, softened
1/2 cup sugar
1 teaspoon vanilla
1 egg, separated
1 1/4 cups sifted all-purpose flour
2/3 cup chopped almonds
Raspberry jam

Directions:
Directions:
Preheat oven to 300º.

Beat butter, sugar, vanilla, and egg yolk in a medium bowl until fluffy. Stir in flour. Gather dough into a ball. Chill for several hours.

Roll level teaspoonfuls of dough into balls. Dip into slightly beaten egg white. Roll in almonds. Place on ungreased cookie sheets 1" apart. Press an indentation with your finger in each. Fill the indentation with jam.

Bake for 20 minutes or until lightly golden. Cool on wire racks.

Yields 2 dozen cookies.
