8 ounces semi-sweet chocolate baking bars
2 eggs
1/4 teaspoon salt
3/4 cup firmly packed brown sugar
1 teaspoon vanilla extract
1 cup almonds, chopped and toasted
Slivered or sliced almonds

Preheat oven to 325º.

Melt chocolate bars over hot (not boiling) water, stirring until smooth. Remove from heat. Cool for 5 minutes.

In a small mixer bowl, beat eggs and salt at high speed until thick, about 3 minutes.

Add brown sugar and beat at high speed until thickened, about 5 minutes.

Beat in cooled chocolate and vanilla extract until smooth.

Stir in chopped almonds.

Drop mixture by rounded measuring teaspoonfuls onto greased cookie sheets. Insert one almond slice into the top of each cookie.

Bake for 8-10 minutes or until shiny and set. Cool on cookie sheets for 2 minutes. Remove from cookie sheets and cool.

Yields about 4 dozen cookies.

For chocolate walnut cookie bites substitute 1 cup walnuts, chopped and toasted, for almonds. Garnish cookies with small pieces of walnut before baking.
