Ingredients:  
1 large (20 oz) can of unsweetened pineapple chunks
2 tbs flour
3/4 cup sugar
1/2 stick butter
1 cup grated extra cheddar cheese (I use Cracker Barrel-red cover)
1 1/3 cup Ritz cracker crumbs for topping

Directions:
Directions:
Drain juice from pineapple and put in saucepan. Add flour, sugar and butter.
Simmer until thickened. Add cheddar cheese and let melt. Add pineapple and pour into casserole dish. Sprinkle crushed Ritz cracker crumbs over the top.

Heat at 350º for 35 minutes.
