1/2 head romaine lettuce
1 can drained mandarin oranges
1 c. celery, sliced
2 green onions, sliced
Dressing: 1/4 c. sliced almonds
1 T. plus 1 tsp. sugar
1/4 c. oil
2 T. Vinegar
2 T. sugar
1 T. parsley
1/2 tsp. salt
dash pepper

Directions:
Directions:
Chop lettuce into bite sized pieces. Combine lettuce, celery, green onions and oranges. Mix dressing by combining oil, 2 T. sugar, vinegar, parsley, salt and pepper, shake well. Saute' almonds and 1T. plus 1 tsp. sugar in skillet until sugar melts and mixes with almonds. Mix dressing and almond mixture together, pour over salad.

Since I am already making the dressing, I often double or triple the dressing and keep some in a jar in the refidgerator for other salads through the week.
