1 c. celery (4 stalks)
1 c. carrots (about 3)
1 large onion
All sliced thinly.
1 large can shell beans w/ liquid
1 c. cut green beans w/ liquid
1 28 oz. can whole tomatoes
3 beef bouillon cubes
1 tsp. sugar
3 T. butter
2/3 c. barley
1 lb. lean ground beef

Directions:

Slice vegetables ahead.
Pour tomatoes into a bowl...remove stiff cores and cut up. Add bouillon cubes and sugar to tomatoes; set aside.
In large soup pot, saute' celery, carrots and onion in 2-3 T. butter for 5 minutes.(medium heat) Stir constantly.
Add tomatoes and bring back to boil, then add 6 c. hot water.
Meanwhile, brown and drain beef.
Add beef to soup and bring back to boil.
Add barley and simmer on low for 55 minutes.
Add beans about 10 minutes before done.
Stir occasionally.
(May be served with grated cheese on top.)
Garlic can be added to this recipe if desired.
