3 lbs. wings or drummies (about 8 per pound)
3 T baking powder
1 tsp. sweet paprika
1 tsp. table salt
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. cayenne pepper (hot)
1/2 tsp. black pepper


SAUCE
6 T Frank's Louisiana Sauce
6 T unsalted butter
2 T white wine vinegar
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/4tsp. cayenne pepper (Medium)
1 tsp. Worcestershire sauce
Coarse Kosher salt (optional)

Adjust oven racks to upper-middle and lower-middle position and heat oven to 250 degrees.

Set wire rack in aluminum foil-lined, rimmed baking sheet. Spray with high-heat canola oil.

In a 1-gallon zip-locked plastic bag, combine banking power, garlic powder, onion powder, paprika, cayenne, black pepper and salt.

Pat wings/drummies dry with paper towels and transfer to the plastic bag and shake until completely covered.

Arrange wings/drummies on wire rack. Bake on lower rack for 30 minutes.

Move to upper rack, increase oven temperature to 425 degrees, and roast 20 minutes.

Rotate the sheet. Roast 20 minutes.

Turn oven up to 500 degrees and roast for 10 minutes until crispy, golden brown.

Remove sheet from oven and let stand for 5 minutes.

Put in large bowl and toss in sauce.

Sprinkle with Kosher salt to taste.

SAUCE
Mix all the ingredients in a saucepan and, over low heat, bring to a simmer, stirring occasionally until butter is melted, and then turn off.

This is a fantastic, crunchy wing/drummie recipe. I make it medium hot. But they taste great even hotter. You could double the sauce and have extra on the side for dipping.
