1/2 cup + 2 tbsp. butter
1/8 cup golden syrup
11/2 cup raisins
11/2 cup currants
3/4 cup sultanas
11/4 cup milk

1/2 tsp. bicarb of soda
11/2 cup plain flour
2 tsp. baking powder
1/2 tsp.salt
1 rounded tsp. pumpkin spice
1 tsp cinnamon
2 eggs, beaten separately

Crazy measures because they are converted from 'British' where they weigh all ingredients. (We use small scales for other stuff, nudge nudge, wink wink :-)

Put butter, syrup, raisins, currants, sultanas, milk in a saucepan and heat slowly until the butter has melted. Mix well and simmer for 5 minutes and let the mixture cool.

In a mixing bowl mix together soda, flour, baking powder, salt, spice, cinnamon. When fruit mix is cool fold in the dry mixture into the fruit mixture, along with 2 pre-beaten eggs.

Fills a 4x8 inch loaf baking tin. Put in oven set at 300F and check after 60 minutes with a cake tester. Continue to bake until cake tester comes out dry, but do not over cook.

Let cool in tin for 30 minutes then pop the cake out onto a cooling rack to cool rest of way. Enjoy!

Christmas at the McDougall household would not have been complete without a Christmas cake. The cake was usually finished with a layer of marzipan then a layer of icing made to look like snow drifts. And of course a little Christmas scene in figures.

This is a relatively simple recipe because the more luxurious ingredients were difficult to come by.

This did not stop it tasting good. In fact it was so good that a certain young McDougall was frequently caught cutting himself a massive slice of cake and then going back to bed (i.e. cake for breakfast). Never been able to get this story out of the family folklore.
